Saison

Saison is a Belgian-style beer that is historically linked to the Wallonia region in the south of Belgium. Also known as “farmhouse ale,” saisons were first brewed many centuries ago to quench the thirsts of farmworkers during the harvest season. (In the course of the summer, some farmers would drink as much as two gallons of saison per day!) Today, most saisons exist as light, blond-colored ales moderate in alcohol content, with many averaging around 7% by volume. They are noted for having complex flavor profiles that exhibit notes of tropical fruits, clove-like phenols, black pepper and intricately woven spices. And while some saisons are brewed with spices, such as coriander and cardamom, most develop their characteristic flavors from unique yeast strains. Many of the yeasts used to ferment saisons function best at temperatures of 90 degrees Fahrenheit, similar to those used in Bordeaux wines. These temperatures are much higher than typical beer yeasts are capable of withstanding. With their light body, crisp dry finish, and spritzy carbonation, saisons make for an incredibly flavorful refreshment, whatever the season. Saison DuPont and Fantome Saison are two widely available and traditional versions from Belgium. For some equally wonderful American interpretations, pick up a bottle of Lost Abbey’s Red Barn or Ommegang’s Hennepin. Most of these can be found at fine food/liquor stores, such as Whole Foods and BevMo. Cheers!
