BAJA FISH

 

There are plenty to choose from, but it’s with the halibut taco that Baja Fish truly makes its mark. Here, the weightier corn tortilla is wisely swapped for its flour counterpart, a thin thing pocked with crisp brown spots collected by just the right amount of time on the grill. Piled inside are hunks of grilled and scored halibut tossed with more of the same cabbage, pico de gallo and Baja sauce. The combination is close to that of the Baja fish taco, but the halibut taco doesn’t bury the fish in batter. It’s because of that that the halibut taco eats exactly like a fish taco should: guiltless and light, but still every bit as pleasing as even the most charred carne asada. Simply put, the halibut taco is about as close to a perfect fish taco as there is.
