FIXER-SUPPER: VEGANOMICAL!
Is it just me, or does everyone have no dough? Lately, I’ve been scouring the Internet for recipes that will use every last bit of food I have. Rachel Ray’s once-a-day trips to the store are not an option.
But good flavor is! So here’s what I’ve made recently and LOVED. No pictures or links, cause I have to vote and didn’t alter the recipes at all. (Save for frozen spinach in the Italian rice and beans.)
Without further ado:
Edamole, or guacamole made from edamame. Made this for the Super Bowl: light, fluffy, kind of like Eli Manning. Delicious and a winner.
Italian Rice and Beans, recession-ready and yields at least three servings if you double the recipe.
Carrot Soup. I can’t pass by carrots and not buy some, but then I always end up not really using them. This recipe will change that forever. The fennel is a nice touch!
